The company sent me two complimentary meals for review and this week I’m featuring the second recipe: Chana Masala with Oven Roasted Sweet Potato

The Chana Masala came with the following ingredients:

Coconut Sugar
White Sweet Potato
Onion
Ginger
Lemon
Diced Tomatoes
Serrano Pepper
Garlic
Chickpea

Cilantro

Spice Blend made in-house with:

Turmeric, Garam Masala, Coriander, Cumin

Ingredients we had to provide ourselves were: oil, salt and pepper.

Every recipe includes a detailed step-by-step cooking instructions. It was super simple and easy to follow.

They provided a medium sized jalapeño for us to slice. We didn’t end up using the entire jalapeño to keep the spice level to mild-medium.

The boyfriend was in charge of the skillet and helped with assembling the rest of the ingredients together while we had the sweet potatoes cooking in the convection bake oven.

Bring the chana masala to a boil then turn it down to medium-low and let it simmer for 10-15 minutes until the sauce thickens.

Chana Masala with Oven Roasted Sweet PotatoThe finished product! It’s also vegan/vegetarian friendly for those of you with dietary restrctions. I’ve noticed that this recipe occurs frequently on their website which means it’s probably a popular dish to order. My boyfriend and I both enjoyed this dish very much. The coconut sugar incorporated into the sauce definitely helped cut out the acidity a bit along with the sweetness of the sweet potatoes. This dish is more on the carb heavy side and we were completely stuffed by the end of our meal with some leftovers. Overall, I had more fun making this dish than the turkey fajitas from a couple of days ago as it was more unique and tasty 🙂
