I’m excited to announce that Uncle Tetsu has finally opened today at Metrotown! I was lucky enough to get an extended invite for a media preview (Thanks Andrew!) with my foodie friend Regina yesterday for an exclusive tour. For those of you who are unfamiliar with Uncle Tetsu, they are a popular Japanese franchise best known for their signature cheesecake. Each of their cheesecakes are meticulously crafted by hand with five simple ingredients: cream cheese, butter, sugar, eggs, flour. Compared to a traditional cheesecake, their signature cheesecakes contain no crust, filling or topping. The texture of the cake resembles more of a cross between spongecake / soufflé cake due to its fluffiness.
According to Luca Settembrini, the operations manager for Uncle Tetsu, it’s been a long (almost a year!) and grueling process getting this location up and running due to Metrotown’s strict land use/zoning regulations. They’ve been busy training staff the past week of getting the consistency correct and ensuring the quality remains just as a good as the other locations across the globe. Their next franchise is expected to open in Montreal in June.

Each batch yields 18 cakes and takes approximately 45 minutes to bake, staggered in 15 minute intervals.
Bakers gently hand fold the beaten egg whites into the batter, incorporating as much air in the mix as possible so that it prevents the batter from deflating once it goes in the oven.
Baking the cakes in a warm water bath (bain marie) helps regulate the baking temperature and keep the air in the oven moist and humid to prevent the cracks and dryness around the edges.

The Madeleines ($2.50 each/ Buy 3 get 1 free $7.50) were actually my favourite! I loved the subtle sweetness of the honey. Definitely recommend grabbing them along with your cake.
Signature Cheesecake ($13). It was my second time trying their cheesecake (first experience was when my friend brought one from Los Angeles!). I could definitely taste the difference between eating it fresh out of the oven and refrigerating it overnight. The texture felt more like a souffle when eaten fresh, with stronger notes of ‘eggyness’ more so thancream cheese. Whereas eating it cold resulted in a denser texture, with a stronger cream cheese flavour. For those of you who are natural sweet tooths, you might find their cakes lacking in sweetness as it is very subtle. It’s great for a light dessert to share with friends and family without the heaviness of a regular cheesecake. There’s been a lot of hype surrounding Uncle Tetsu’s grand opening. I’m not sure if I would line up for it right now as they’re still working out their kinks, but knowing how much effort is put in towards every cake makes the trip worthwhile.
